Have you heard of “NO NAME NOODLE”? It’s one of Bangkok’s most exclusive ramen spots. This restaurant offers an extraordinary dining experience that goes beyond traditional ramen. Former Yoshimoto comedian and Fukuoka-born ramen chef SHIN (Inoue Mushiba Nihon) created this legendary spot. Known for its premium ramen priced over 1,000 THB, it requires an online reservation to secure a seat.

Now, let’s talk about “SHOYU STAND,” the sister restaurant of NO NAME NOODLE. Unlike its high-end counterpart, SHOYU STAND provides a more affordable yet high-quality ramen experience. Even better, no prior reservation is needed—though you might need to wait in line!

A Concept That Celebrates Temperature

SHOYU STAND follows a unique concept: “Enjoying Ramen at Different Temperatures.” The menu offers three ramen options, each served at a different temperature. During my visit, I chose their signature dish: JIDORI SHOYU NOODLES “KURO”

Inside the Restaurant

Small but Cozy Ambiance

The restaurant is small, with only 12 seats arranged as six sets of two. However, the seating layout is flexible, making it easy to accommodate groups of two or four.

When I visited on a Sunday at noon, two groups were ahead of me. I waited on chairs placed in front of the MAiSEN Tonkatsu restaurant. Interestingly, all the customers were Thai, including families. This suggests the restaurant has broad appeal across different age groups.

JIDORI SHOYU NOODLES “KURO” – A Refined Flavor Experience

  • Aroma: Rich and inviting.
  • Soup: Carefully crafted, the broth was flavorful and well-balanced.
  • Noodles: Delightfully chewy and satisfying.
  • Toppings: Three large slices of perfectly prepared chashu, a marinated soft-boiled egg, menma (bamboo shoots), finely chopped white negi, and a touch of mitsuba. Each ingredient was well-seasoned. The more I chewed, the more umami unfolded in my mouth.

This bowl of ramen was truly worth the wait.

I waited outside for 15 minutes before finally entering. However, once seated, I had to wait another 10 minutes for my ramen to arrive. Despite the wait, the beautifully presented bowl made it worthwhile. It looked stunning—absolutely picture-perfect!
