Introduction to Kaesugi

Bangkok is home to many delicious restaurants, not just around the stations but also tucked away a little further in. If you go a little more than a kilometer down Soi Sukhumvit 39, you’ll find several great eateries, one of which is Kaesugi.

Kaesugi originally started as a passion project by an amateur ramen lover. He would serve ramen just one day a week, in the basement bar of a live house. However, the ramen’s popularity grew quickly, with people requesting it more frequently, leading to operations expanding to two or three days a week. Eventually, Kaesugi opened as a nighttime ramen shop in the bustling downtown of Iwakuni City, Yamaguchi Prefecture.

Today, they continue to improve their craft daily, working hard to perfect their unique tonkotsu-based ramen. Kaesugi in Bangkok is a relatively new addition, opening in August 2024.

The interior has a chic and even somewhat grand feel.

It’s impressive that they place chopstick rests and soup spoon holders on the trays. Do you happen to know what the black cloth in the back is? It’s an apron to help prevent soup splashes on your clothes. It’s a thoughtful touch that’s hard to find in many places.

Dan Dan Noodles Soup Style

Kaesugi’s Unique Ramen
The toppings for the Dan Dan noodles include classic ingredients like Chinese cabbage, white onion, and ground meat. The meat is generously portioned, making it quite filling. You can choose between medium or spicy hot, though I wasn’t specifically asked which I preferred, and I believe mine was the medium. For those who don’t mind a little heat, it’s not overly spicy.

The noodles are medium-thick, which pairs nicely with the sesame-flavored soup.

The tonkotsu-based broth has a delightful sesame fragrance and a rich, full-bodied taste that is truly delicious.

The fried rice has a slightly darker color and stronger flavor. It’s tasty, though white rice might pair better with the Dan Dan noodles.
